Introduction

I call this recipe "Depression Era" because it reminds me of the types of ingredients that would have been easily available during the depression. The fresh basil leaves really make the flavor pop - enjoy! Ingredients

    2 potatoes, peeled and diced
    1/2 clove garlic, minced
    1 medium onion, chopped
    2 c. fresh baby spinach leaves
    5 leaves fresh basil
    1 - 14 oz. can stewed tomatoes
    32 oz. vegetable broth

Directions

Boil potatoes, onion and garlic in vegetable broth until potatoes are soft, but not mushy.

Pour stewed tomatoes into a bowl, reserving juices, and cut the tomatoes into bite size pieces.

Add spinach, basil leaves, and stewed tomatoes (with juice) to the pot, and soft boil till spinach wilts.

Serving Size: Makes 6 one cup servings
