Curried Apricot ChickenSubmitted by: TERRI307
4 boneless chicken breasts cut in 1-2 inch pieces
3 tbsp oil
2 onions chopped
2 cups raw rice
4 tsps curry powder
1/2 tsp pepper
5 cups chicken broth (boiling)
2 cups dried apricots
1 cup raisins
2 tbsp lemon juice.
1 tsp dried tarragon
Saute onions till tender, add the rice, curry, pepper and stir till the rice is coated.
Stir in broth, apricots, raisins and lemon juice.
Stir in Chicken.
Cover casserole with foil and seal (important)
then put the cover on.
Bake in 35 degree oven for 45 minutes.
