Breakfast Stir Fry

Ingredients

    1/2 cup egg beaters )(or similar)
    3 vine sweet mini peppers
    1 garlic clove chopped
    1 shallot sliced thin
    1 green onion chopped
    10 baby carrots
    1/4 cup water chestnuts
    3 - 4 slices of tomato chopped
    1/4 cup broccoli florets
    1/4 cup cauliflower florets
    1/2 cup fresh baby bella mushrooms chopped
    6-8 snow peas
    1/2 cup tofu cut into small pieces
    handful of mung bean sprouts
    4 thai chilies chopped (less if you prefer less spicy)
    1 tbsp cilantro
    1 tsp granulated sugar
    1 tbsp oyster sauce
    1 tbsp sweet soy sauce
    2 tbsp canola oil
    1 cup cooked brown rice
    salt and pepper to taste

Directions

heat oil in a wok. Add tofu and cook until brown. Add garlic, onions and shallots and cook until translucent. Add vegetables, soy, oyster, sugar. cook 2-3 minutes. Add eggs and brown rice cook 3-4 minutes or until egg is done.

Serving Size: makes 8 cup servings
