Morri's French Onion Soup

Introduction

This is a recipe of my mom's that my daughter and I modified using low-sodium ingredients, and low-fat cheese. This is a recipe of my mom's that my daughter and I modified using low-sodium ingredients, and low-fat cheese.
Number of Servings: 6

Ingredients

    6 c sliced white onions
    1 tbsp garlic butter
    1 c red wine
    6 c Campbell's 30% Less Sodium Ready to Use Beef Broth
    1 c water
    6 thick slices French Bread
    6 oz Mozzarella cheese (skim)

Tips

We have sometimes skipped the toast and broiler, simply sprinkling the cheese on top of the soup and eating it that way. Just as good, but not as 'traditional'.


Directions

In a large pot, gently cook onions in the garlic butter until nearly clear. Slowly add the wine and water, then simmer for ten minutes. Add the broth and simmer a further twenty minutes, until the onions are cooked through, and the flavors have merged. While simmering, you can toast the bread.

Ladle into six traditional onion soup bowls, float a slice of toasted bread on the soup, and top with an ounce of the mozzarella.

Place under broiler for five minutes, or until the cheese is melted and bubbly/browned.

Serve hot!
