Hamburger Vegetable Soup

Introduction

My entire family loves this recipe. It's wonderful on a cold day. My entire family loves this recipe. It's wonderful on a cold day.
Number of Servings: 10

Ingredients

    3/4 lb extra lean ground beef
    1 cup diced onion
    1 cup diced celery
    3 cups water
    1 large diced potato
    1 cup chopped or sliced carrots
    1 cup frozen corn kernels
    2 cups frozen green beans
    28 oz can diced tomatoes
    1 tsp salt
    1/4 tsp black pepper
    1/4 dried basil leaves
    2 tsp bottled brown boquet sauce

Directions

Lightly spray large pot with cooking spray.
Put ground beef, onions and celery in pot.
Cook over medium to medium-high heat until ground beef is browned and vegetables begin to soften.
Add water, potato, carrots, corn, green beans, diced tomatoes, salt, black pepper, basil leaves and bottled brown boquet sauce.
Stir to combine.
Heat under high heat until soup begins to boil.
Reduce heat to simmer and cover the pot.
Simmer for 30-45 minutes.

    "Brown Bouquet" sauce refers to Kitchen Bouquet, which is used as a gravy base sometimes. It's old-fashioned and when I don't have enough "scrapings" after roasting meat to properly flavor a gravy, I'll use KB. It is decidedly NOT a BBQ sauce! - 4/5/08

    I brown the ground meat, drain it throroughly in a colander & return it to the pan with the veggies & seasonings, brown it all together for added flavor. I disguise spinach by chopping it very tiny. Baby limas, turnip, parsnips are tastey, too. Sometimes I thickened with flour & fat-free 1/2 & 1/2 - 7/1/08

    This was very good without any extra seasoning like the 'bouquet' . I left out the green beans and tomatoes because I am not fond of them there was plenty of vegetables for me in it all ready. My first SP receipe!! next Grape Salad :-) - 12/4/08

    This soup is yummy! I substitute beef broth for the water and depending on how hungry my boys are will add a handfull or two of macaroni the last 10 minutes of cooking! - 7/1/08

    I have eaten this soup since I was little, my grandma used to make it every week! When I was big enough to reach the stove she taught me her recipes and this is one of my favorites. She sometimes put in a handful of pasta or rice. She varied the veggies depending what was ripe in the garden that day - 7/1/08

    A nice hardy soup. Didn't have green beens on hand but you can add whatever veggie you like. I added some cubed butternut squash to the recipe along with some beef boullion for extra flavour and served the soup with grainy bread. Hubby really liked it! - 5/1/10

    This soup was always a standby in my family - to this day, when I need a boost, I call my mother and request hamburger soup! I made it a little different - no beans or brown boquet sauce - but I did mince garlic. - 7/1/08

    I substituted ground beef for ground chicken, omitted the carrots as we don't really care for them and instead of the brown bouquet I put in some chicken gravy mix. It was such a hit that even my daughter's friend had 2 bowls, my neighbor tried it and took some home and it was all gone that night. - 4/14/08

    I have been making this soup for years now! For many years I tried and tried to make homemade soup but dishwater was probably tastier.LOL
    This was the very first soup I ever made that turned out!!We LOVE it.You can change the veggies to suit yourself and it's always GOOD. - 4/5/08

    Instead of adding ground beef, I thought I would try Morning Star veggie crumbles. I added some minced dried onion, 2 tbsp worchestire sauce and some garlic salt. I also added a couple cans of Campbell's Healthy Minestrone soup for some added fiber. Veggie crumbles are great in spagetti also. - 4/5/08

    I didn't exactly make from this recipe, but one day needed something warm and that would last a few days during a snow storm. I used a buillion cube instead of the Bouquet sauce. I have been making this for years! - 4/5/08

  • This soup was so good and easy to make. I have my own recipe for beef stew seasoning that I used in the soup and also added frozen peas and used vegetable stock in place of water. Next time, I will double the recipe so there will be plenty of leftovers. - 11/7/13

  • My standby soup recipe. Have never tried it with Kitchen Bouqet - sounds good tho. Love this soup and especially like that I can add whatever vegetables we have and it's very tasty. My only regret is that my family only likes to eat soup when the weather is cold. I like it whenever! - 3/5/13

  • I used a fresh tomato, fresh green peas, canned corn kernels. Since I didnīt know exactly what the brown bouquet sauce was I used powder to prepare gravy (50% less sodium). The result was very good! Very tasty! - 1/8/13

  • I made this in the crockpot and we thought it was good but not great. I like the fact that we get in lots of veggies in this soup and the nutrition is excellent. But other than that I found it a little bit boring. Not a bad recipe at all, but I can't say we loved it, either. - 1/10/12

  • I made a few changes, instead of potato I used left over whole wheat rotini, and I used no sodium beef boullion instead of the brown sauce, We loved the soup. Also I used low sodium tomatoes. I server it with hearty homemade whole wheat bread, delicious! - 1/4/11

  • OMGoodness... GREAT!!! I will continue to make and have it on hand throughout the winter and even in the summer. I used 1/2 pork and 1/2 hamburger to make it a little less fat. I also didn't use the Boquet Sauce (Kitchen Bouquet). Keep these wonderful recipes coming! I LOVE trying new recipes! - 1/24/10

  • In New Zealand we grew up with this as one of the main meals of the week. It was simply called Mince (our name for ground beef) This is great frozen in tubs and can be thawed & heated up quickly with some toast or some frozen vegetables on the side for a quick meal during the week ! - 4/5/08
