General Tso's Chicken

Number of Servings: 4

Ingredients

    1 c. rice
    1 c. water
    1 lb chicken thigh meat, cut into chunks
    3 tsp. olive oil, divided in two
    1 c. each of chopped green pepper, onion, carrot, and broccoli
    6 Tien Tsin peppers, seeded and chopped fine or ground

    ***Sauce***
    1 c. chicken stock
    ¼ c. soy sauce
    1 TBSP. cider vinegar
    2 TBSP. white wine
    ¾ c. sugar
    ¼ c. cornstarch
    ½ tsp. ground ginger
    1 tsp. minced garlic

Directions

Put the rice and water in a small pot over low heat and cover until rice has absorbed all of the water (about 20 minutes).
Meanwhile, mix all sauce ingredients in a small bowl and set aside.
Put a wok or other thin skillet on very high heat and add 2 tsp. oil. Add all the veggies and stir fry until tender (about 3-4 minutes). Remove veggies and set aside in a large bowl.
Add other 2 tsp. oil to wok and stir fry chicken until cooked through (about 3-4 minutes). Remove chicken into same bowl as veggies.
With wok still on very high heat, add sauce mixture and stir constantly until it thickens. This will happen suddenly and is cool to watch! Add tien tsin peppers and stir about 30 seconds, then add cooked chicken and veggies to coat. Serve immediately over rice.
