Breakfast Bunches

Introduction

Number of Servings: 12

Ingredients

    1/2 lb meat (see note below)
    8 large eggs
    2 cups broccoli
    1/4 cup chopped tomoatoes
    1 tsp ground oregano
    4 fresh basil leaves, chopped
    1/2 tsp each, salt and pepper
    spices to taste



    Note:
    You can use 1/2 lb ground meat+ spices. I used ground pork and 1/2 tsp red pepper flakes, 1/2 tsp pepper, 1/2 tsp salt, 1/4 tsp cayenne pepper. Or you can just use 1/2 lb sausage. I chose to use the ground pork and spices, because I am avoiding wheat.

Tips

I keep these in individual sandwich bags in the fridge, so my family and I can just grab them, pop them in the microwave for 30 seconds and go.


Directions

Preheat oven to 350C and grease a 12-cup muffin pan.
Brown the sausage/meat&spices
Add all ingredients except the eggs to a large bowl. Stir to mix.
Whip eggs and add to sausage mixture.
Fill 12 muffin cups
Bake30 minutes or until solid.



Serving Size: Makes 12 muffin-sized servings.
