Southwestern Baked Potatoes

Introduction

Meatless Monday! Serve with a mixed salad or steamed broccoli for a light dinner. Meatless Monday! Serve with a mixed salad or steamed broccoli for a light dinner.
Number of Servings: 4

Ingredients

    4 large baking potatoes, washed well and dried
    1 can black beans
    1 can rotel tomatoes & chiles
    1/2 cup shredded cheese

Tips

Top with lowfat sour cream or plain Greek yogurt!


Directions

1. Preheat oven to 400.
2. Bake potatoes until tender, about 45 min.
3. Meanwhile, combine beans and tomatoes. Season to taste, mix well, and set aside.
4. When potatoes are done, split down the middle and stuff with tomato bean mixture. Top with 2 tbs cheese each.
5. Cook additional 5 minutes.

Serving Size: makes 4 servings
