4 large baking potatoes, washed well and dried
1 can black beans
1 can rotel tomatoes & chiles
1/2 cup shredded cheese
Top with lowfat sour cream or plain Greek yogurt!
2. Bake potatoes until tender, about 45 min.
3. Meanwhile, combine beans and tomatoes. Season to taste, mix well, and set aside.
4. When potatoes are done, split down the middle and stuff with tomato bean mixture. Top with 2 tbs cheese each.
5. Cook additional 5 minutes.
