2 eggs (separated, whites beaten stiff)
1 tbsp olive oil (or other)
1 cup 2% milk
2 tbsp flax meal
1 cup flour
1 stevia packet
1/2 scoop protein powder (I use Leanfit Vanilla Whey protein)
- You can use any nut or soy based milk as a substitute. - Use protein powders that are other flavors to make it interesting
- or add something else to add flavour such as: almond extract & slivers, cinnamon and small junks of apple, matcha tea, etc. I added a tsp of my 'greens' shake to make them extra healthy. Not too flavorful, but good for you.
Combine rest of ingredients in other bowl until well mixed.
Fold stiff egg whites in carefully until well combined.
Spray waffle maker with non stick spray (only at the beginning)
Ladle into waffle maker using 1/4 cup batter for each.
Enjoy with your favorite Jam, maple or agave syrup and fresh fruit.
