Rainbow Shrimp



Introduction

Ingredients

    2 servings Gorton's classic grilled shrimp
    Red and yellow bell pepper - cut into strips (to taste)
    Olive oil (drizzle)
    dried or fresh basil (to taste)
    lemon juice (drizzle)
    1 bag boil-in-bag brown rice
    1 individual serving Steamfresh peas
    soy sauce

Directions

Arrange shrimp in single layer on foil-lined pan, and sprinkle with lemon juice and basil. Arrange peppers around shrimp in same pan and drizzle with olive oil. Put in preheated oven at 425 for 10 - 11 minutes.

Meanwhile, prepare 1 bag boil-in-bag brown rice as package directs. During last 4 - 5 minutes of boiling, add frozen peas. Drain when finished.

Combine peas and shrimp / pepper mixture. Add soy sauce, and salt and pepper to taste. Makes 2 servings.
