3/4 cup white flour
12 ounces chopped leftover ham or ham cubes
15 medium potatoes peeled and sliced thin
1 large onion, chopped
5 cups milk
one teaspoon salt
1/2 teaspoon black pepper
1 stick margarine or butter
1 cup shredded cheese, co jack, cheddar, mozz.
2 cups shredded cabbage
this is not particularly diet food in the way this is written, but it can easily be changed to a lighter version by using low fat cheese, low fat or light margarine, or leaving it out, low fat ham, and skim milk.
add flour and stir and cook about 5 minutes until slightly browned, add salt and pepper.
add milk, and stir with wire whisk until smooth and thick.(kind of making gravy). set aside
add a thin layer of gravy to bottom of pan, then add a layer of potatoes (about 5 thinly sliced), and a layer of cabbage, sprinkle with 1/3 of the ham. add more sauce, then another layer of potatoes, cabbage, ham. repeat until you've used all of it, then put cheese on top.
cover tightly with foil and bake at 350 for about 1 hour and 30 minutes. remove foil last 20 minutes so that it can brown on top.
