Quinoa Cakes

Introduction

my MIL found this and adapted it to her needs and then shared with me! my MIL found this and adapted it to her needs and then shared with me!
Number of Servings: 10

Ingredients

    2 cups cooked quinoa
    2 eggs
    1 cup carrots grated
    2 cloves garlic minced
    1/4 cup cilantro fresh (1tbl dried)
    1/2 cup Parmesan cheese grated
    2 tbl flour
    1/2 tsp salt
    1/4 tsp black pepper

Tips

We use this in place of rice for things with a sauce.


Directions

Mix all ingredients together.
I have a griddle that i spray with pam, use a 1/4 cup scoop to place on hot griddle.
Cook for a few minutes till firmed up, flip, cook to desired doneness

Serving Size: 1 patty (1/4 cup per patty)
