Honeyed Cauliflower with Toasted Almonds

Ingredients

    6 Cups Cauliflower Florets. About 1 Head.
    2 tbsp Honey
    2 tbsp Sherry Vinegar
    3 tbsp coconut oil
    1 tbsp Fresh Thyme, chopped
    1/4 Lemon
    1/3 Cup sliced almonds, Toasted

Tips


Directions

Heat coconut oil in skillet over medium heat. Add cauliflower and sprinkle with salt. Toss gently in oil then let alone while they brown, about 3 minutes. Then flip and brown other side. Continue till all sides are browned. Meanwhile, in a small bowl mix honey and vinegar. Raise the heat for the florets and pour honey mixture over florets and toss to coat. Continue tossing until liquid turns to a glaze, about 3 minutes. Remove, season to taste. Squeeze lemon over top and toss in toasted almonds.
