Ingredients

    Shallots, 6 tbsp chopped
    Butter, salted, 2 tbsp
    Brown shallots lightly
    Celery, raw, 2.5 cups, diced
    Carrots, raw, 3 cups, chopped
    Add and cook 5 minutes
    Vegetable Broth, 8 cups
    Orzo Pasta, 1/2 cup
    Barley, pearled, raw, 1/4 cup
    Salt, 1 tsp
    Thyme, ground, 1/2 tsp

Directions

Brown shallots in butter.
Add carrots and celery. Cook 5 minutes.
Add broth, barley, orzo
