Olive Oil Flour Tortillas

Introduction

These flour tortillas are delicious! Olive oil has been substituted from traditional lard. You could also use whole wheat flour. These flour tortillas are delicious! Olive oil has been substituted from traditional lard. You could also use whole wheat flour.

Ingredients

    4 cups flour
    2 tsp. baking powder
    1 tsp. salt
    2 tbsp. extra virgin olive oil
    1 1/2 cups very hot water

Tips

these tortillas must be kneaded well to have good texture. the more you work them the better they taste. roll them as thin as you can they puff up and shrink a little while cooking. rotate the dough 90 degrees each pass while rolling out to get a round tortilla. takes practice to get them round. be careful not to overcook them as they will become too dry and not stay soft.

mix dry ingredients and then drizzle oil over them in a large bowl. add very hot water and knead dough until smooth and elastic. the smoother the better. add a little extra oil if needed to knead dough smooth. cover and let rest for 10min. heat flat cast iron tortilla pan to medium heat on stovetop. divide dough into 24; 1-inch balls. lightly flour countertop and roll out tortillas. cook about 1 minute each side or until cooked through. cover each tortilla after cooked to keep warm and so that it doesn't dry out. store in plastic container or wrapped in tinfoil.

Serving Size: makes 24; 10-12 inch flour tortillas
