Lemon Pepper Chicken with Rice & Mushrooms

Number of Servings: 4

Ingredients

    2 whole boneless, skinless chicken breasts (4 chicken breast halves)
    3 cups cooked long-grain rice (1 cup uncooked)
    1/2 c. button mushrooms sliced
    1/2 c. bread crumbs
    1 T. lemon pepper for rice (plus enough to taste for chicken)

Directions

1. Cook 1 c. uncooked long grain rice per package instructions. (makes about 3 cups cooked). Set aside.

2. Prepare chicken, trimming any excess fat from breasts.

3. In 9x9 casserole dish, combine rice, mushrooms & lemon pepper. Stir well to combine.

4. Arrange chicken on top of rice mixture. Divide evenly & sprinkle bread crumbs on top of chicken (approx 2 T. breadcrumbs per breast).

5. Sprinkle lemon pepper (to taste) on top of bread-crumb coated breasts.

6. Bake at 375 for 20-30 minutes or until chicken breasts are thoroughly cooked (no longer pink).

Serving Size: 1 chicken breast half & approx. 3/4 c. rice mixture.
