Introduction

Number of Servings: 6

Ingredients

    * 1 1/2 cups finely chopped Celery
    * 1 cup Carrot, chopped fine
    * 3/4 cup yellow onion chopped fine
    * 3 Tbsp. Extra Virgin Olive Oil
    * 2 cloves Garlic, chopped
    * 3 Tbsp. King Arthur unbleached all purpose flour
    * 4 Cups Water
    * 2 cans Bush's Large Butter Beans (rinsed well)
    * 14 oz. (1.75 cup) chopped *TOMATOES in juice (no salt added - use fresh if possible)
    * 1 tsp. Basil
    * 3/4 cup Blackeye Peas (if canned, rinse well)
    * 1 1/2 tsp. Mrs. Dash Original
    * 1 cup finely chopped spinach, cooked in microwave 1 minute.

Tips

Can top with shake of Parmesan Cheese, sprinkle of parsley
If using canned beans, be sure to rinse them really well. The nutrition info given here gives sodium per can, not rinsed; therefore, the sodium is not as high.


Directions

1. In large pot, cook celery, carrots, onion, and garlic in oil until soft (5-8 min.).
2. Add flour, cook 1 min. stirring well.
3. Gradually add water, stirring until smooth.
4. Add remaining ingredients; bring to boil.
5. Reduce heat and simmer for 20-25 min. or until slightly thickened.
6. Just before serving, add spinach to pot and stir.
6. Add salt and pepper to taste

Serving Size: 7 servings, 1 1/2 cup each
