BBQ Beef and cheddar cups

Introduction

From the diabetic "no more than 4 ingredients" cookbook, but adapted by me to be even healthier, using the zero carb/calorie "Walden Farms" BBQ sauce and low carb baking mix. Ingredients

    2 cups carbquick baking mix
    2/3 cup water
    1 lb lean ground beef (preferably grass fed beef)
    1/2 cup low fat shredded cheddar cheese
    1/2 cup Walden Farms Hickory Smoke BBQ Sauce

Tips

The Walden Farms products can be found in most health food stores, or probably online. The BBQ sauce used in this recipe is zero calories/carbs, and consists of mostly apple cider vinegar, dijon mustard, worcestershire sauce, salt, and seasonings.


Directions

preheat the oven to 400*. Make the biscuit dough- mix cups of carbquick baking mix with 2/3 cups of water. Distribute the biscuit dough evenly between 12 muffin cups , pressing the dough up the sides of the cups. Brown the ground beef in a pan on the stove, and drain. Mix in the half-cup of zero calorie BBQ sauce and stir until mixed through. Distribute the bbq beef mixture evenly into each of the 12 muffin cups, and top with even distribution of the shredded lowfat cheese. Bake for 1 minutes. Serves 12 (1 muffin cup each).
