Apple pecan oatmeal muffins

Number of Servings: 12

Ingredients

    Old fashioned rolled oats, 1 cup, dry
    Buttermilk, lowfat, 1 cup
    Butter, salted, (melted) .33 cup
    Brown Sugar, .5 cup, packed
    Egg, fresh, 1 large
    Vanilla Extract, 1 tsp
    Pecans, .5 cup, chopped
    Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb
    Unbleached All-Purpose Flour, 1 cup
    Baking Powder, 1 tsp
    Baking Soda, .25 tsp
    Cinnamon, ground, .5 to 1 tsp
    Nutmeg, ground, .25 tsp
    Salt, .5 to 1 tsp

Directions

Add buttermilk to oats and allow to soak 15 minutes. Add sugar, egg, vanilla, butter, apples and pecans to the mixture. In a separate bowl, whisk together dry ingredients. Then add to wet mixture until just moistened. Scoop into 12 prepared muffin cups, bake @ 375 for 18 minutes (i have a convection type oven, so cooking temp and time may differ, original instructions were to bake @ 400 for 15 to 18 minutes)

Serving Size: makes 12 muffins
