Overnight Yeast Waffles

Number of Servings: 10

Ingredients

    2 cups all purpose flour
    2 cups milk
    1/4 cup butter, melted and cooled to room temperature
    1 tsp yeast
    2 eggs, beaten

Tips

For additional lift, you can separate the eggs. Mix the yolks into the batter and then beat the whites separately and then fold into the batter.
Cut portion size to 1/2 a waffle for easier calorie counting


Directions

Prepare the batter by mixing together the flour, milk, sugar, yeast, salt and butter in a large bowl. The batter will be loose. Cover with a cloth or plastic wrap and set out on the counter at room temperature to ferment for at least 3 hours, preferably overnight.

In the morning, preheat your waffle maker.

After the ferment, the batter will have risen by about double and will be full of air bubbles. With a whisk, mix in the eggs.

Cook according to your waffle maker's instructions until golden brown. This may take about 2 minutes on most waffle irons. Enjoy with your favorite toppings.
