2 slices leftover meatloaf, cubed small
1.5 c onions, chopped
2 c potatoes, diced small
1.5 c frozen peas & carrots mix
1 c beef broth
1 tbsp flour
* 1 tbsp flour to a 1/4 c water, mix until lumps are gone, stir into boiling gravy/stews to thicken.
Once the potatoes have nearly cooked through, add the peas & carrots. If more liquid is required, use equal amounts of broth and water. Simmer for ten minutes then bring to a boil, and thicken gravy with flour/water thickening*.
Serve with biscuits, fresh baked bread, or on its own.
Serving Size: Serves 3, will serve 4 with buns or biscuits.
