Curried Roast Potatoes

Introduction

indian side dish, called for 3oz butter, I substituted with 2 tbsp olive oil. indian side dish, called for 3oz butter, I substituted with 2 tbsp olive oil.
Number of Servings: 6

Ingredients

    2 Tsp cumin seed
    2 Tsp coriander seed
    2 Tbsp olive oil
    1Tsp ground turmeric
    1Tsp black mustard seeds
    3 Garlic cloves,crushed
    2 dried red chiles
    24 oz new potatoes (700 grams)

Directions

Grind cumin and coriander in spice grinder.
Heat the oil in roasting or frying pan add mustard seeds,turmeric,gcrushed garlic and chiles the ground cumin and coriander as well.Place in pre heated oven
400F. for 5 min.Remove pan and add the potatoes,stir well so the potatoes are coated with oil and spices.
Put the dish back in the ovenand bake an aditional 20 -25 minutes,stir potatoes once in a while to make sure they roast evenly and are coated with the spices.

Serving Size: serves 6 @ 4 oz each as a sideb dish.
