Ingredients

1 cup coconut flour
1 1/2 cup very ripe bananas (2-3 bananas) OR ripe plaintains (about 2)
4 eggs
6 T butter or coconut oil (melted)
5 T raw honey
2-3 squirters full of stevia (40-60 drops drops in a squirt) OR 8 packets of NuStevia (8 grams total)
1/4 tsp sea salt
1 tsp--1 T of cinnamon, to taste.
1/2 tsp nutmeg
1/2 tsp baking soda
1 T vanilla
Tips
Make sure the bananas are very sweet.
Plantains are sweetest when they are brown, spotted and look spoiled.
Directions
Pre-Heat oven to 300 degrees.
Oil/Butter 2mini loaf pans. Line with parchment paper.
Mash the bananas. Add all the moist/wet ingredients to the bananas.
In a separate bowl, mix all the dry ingredients. Combine with the wet ingredients.
Put half the batter in each pan.
Bake 1 hour plus 15 minutes, or until tops are golden brown. Let cool for 15 minutes.
