Zucchini Spaghetti

Ingredients

    Zucchini, baby, 3-4
    Turkey, Ground turkey, 93% lean,1 pound
    San Marzano Silver Palate Marinara Sauce – 25 ounce jar
    Oregano, ground, 1 tbsp
    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Peppers, sweet, red, fresh, 1 cup, chopped
    Garlic, 3 cloves


Tips

You can use any brand of marinara sauce, but I like the Silver Palate or White Linen Brands because these have only 2-3 grams of sugar per serving.

Use small, baby zucchini as these are firmer and have very little "core". You may need one extra zucchini if you discard the core as I suggest.


Directions

Place marinara sauce in a large sauce pan add oregano and other spices of your choice. Begin to simmer sauce. Sauté ground turkey in non-stick pan. Drain and add to the marinara sauce. Next sauté the onions, green pepper and garlic in the olive oil. Once these are softened and onions are translucent, add to the marinara sauce. While the sauce simmers, shred the zucchini using the julienne peeler. I like to rotate the zucchini so that I get the nicer "noodles" from the outer parts of the zucchini. Discard the "seedy" core as these are too watery. Steam the zucchini noodles in the microwave with a small amount of water and covered with plastic wrap for 2-3 minutes. When tender drain in a colander.

Serve as you would regular spaghetti.
