Veggie Quinoa Bites

Introduction

These tasty little bites are single serving snacks that can be used as appetizers or a side dish. Kid friendly and can get a super picky eater to take in some whole grains and vegetables. These tasty little bites are single serving snacks that can be used as appetizers or a side dish. Kid friendly and can get a super picky eater to take in some whole grains and vegetables.
Number of Servings: 36

Ingredients

    1 1/2 cups quinoa
    3 cups water
    2 cups shredded carrot (about 2 medium)
    2 cups shredded zucchini (about 2 small/medium)
    3 cups shredded reduced fat cheddar cheese
    1/2 cup french fried onions
    3/4 cup seasoned Italian bread crumbs
    3 large eggs
    1 tablespoon minced garlic
    1 teaspoon salt
    1 teaspoon ground black pepper
    1/2 cup basil pesto

Directions

Boil the water and add the quinoa. Reduce heat to low and cover. Cook for about 12 minutes. Uncover and fluff. While the quinoa is cooking, heat the oven to 350 degrees. Combine all of the ingredients into a large mixing bowl. Mix everything together. Lightly grease muffin tins. Fill muffin tins about 3/4 full with the quinoa mixture. Bake for 15 minutes.
