Broccoli Soup

Number of Servings: 10

Ingredients

    2 leeks
    1 large onion
    Bundle broccoli
    2-3 potatos skin on
    1/2 cup butter
    1 tsp Cumin
    1 tsp Coriander
    1/2 tsp cayenne
    Salt and Pepper to taste
    6 cups chicken broth
    2 cups water

Directions

Chop all ingredients.Clean leeks. Saute leeks, onion in butter til soft. Add potato and broccoli, mix thoroughly. Add spices and mix in. Salt and pepper to taste. Add chicken broth and water.
Bring to a boil thenn lower to a simmer for 2 hours. When all veggetables are soft, puree with a hand beater.
Keeps well frozen.
