Ingredients

1/2 C. Chopped Onion
2 tsp. Butter
2/3 C. Chicken Broth
1/2 C. Salsa
1/2 C. Uncooked Long Grain RIce
1/8 tsp. Garlic Powder
2 Chicken Breasts (5 oz. Each)
1/3 C. Shredded Cheddar
Tips
You do NOT have to worry about stirring the rice. Just give it a quick stir when you turn the chicken.
Directions
In a skillet, saute' onion in butter until tender. Add broth and salsa; bring to a boil. Stir in the rice and garlic powder. Place Chicken breasts over rice; cover and simmer for 10 minutes.
Turn chicken over; cover and cook 10-15 minutes longer or until chicken juices run clear and rice is tender. Remove from heat. Sprinkle with cheese; cover and let stand 5 mins.
Serving Size: Makes 2 Generous Servings
