chicken piccata

Ingredients

1/2 cup white wine
1/4 cup lemon juice
1 large boneless skinless chicken breast, cut into 1 inch pieces
1 tablespoon margarine
1 cup whole wheat angel hair or spaghetti
Salt
pepper
1 bunch broccoli
Tips
Blanch broccoli in pasta pot. less dishes = better tasting dinner. :)
Directions
Blanch broccoli for 1-2 minutes in boiling water before cooking pasta.
Cook Pasta according to directions on box in boiling water.
Heat olive oil in skillet on high. Season chicken with salt and pepper. Add to pan and cook through. Remove from pan. Deglaze pan with white wine. Add lemon juice. Cook until reduced about 5 minutes. Season with salt and pepper. Add chicken back to sauce to reheat. Toss pasta and broccoli in sauce and serve. Top with grated parmesand (optional)
