Ingredients

    Yellow Cornmeal, 1 cup
    Whole Wheat Flour, 0.5 cup
    White Flour, 0.5 cup
    Baking Powder, 2 tsp
    Salt, 0.5 tsp
    Flax Meal, 2 Tbsp
    Water, 6 Tbsp
    Nonfat Milk, 0.33 cup
    Orange Juice, 0.33 cup
    Unsweetened Applesauce, 0.33 cup
    Orange Zest, 2 tsp
    Honey, 0.33 cup

Tips

Use non-dairy milk for a vegan cornbread


Directions

Serving Size: Makes 16 squares

Mix 2 T flax meal with 6 T water and let it gel, microwaving if needed. Stir all ingredients together, pour into 9"x9" pan (or small cast iron skillet) and bake at 350*F for about 25 minutes.
