Ingredients

    2 TBSP olive oil
    1 Medium onion, chopped
    4 Cloves Garlic, minced

    3 Medium Carrots, chopped
    2 Stalks Celery, chopped
    2 TBSP Chilli Seasoning

    2 Cans Chopped Tomatos with Green Chillie
    1 Can Condensed Tomato Soup

    1 LB Lean Ground Beef, browned
    2 Cans Black Beans, drained
    2 Cups Rice, Long-Grain, prepared

Tips

My kids like to add shredded cheddar cheese on top!
the ingredient list 'options' don't really match up with the amounts and resources i used.


Directions

saute onion and garlic in olive oil.
add chopped carrots, celery, and undrained chopped tomatos. Add 2 TBSP chilli seasoning and simmer covered to retain moisture.
meanwhile, ground beef and drain. rinse if necessary.
rinse black beans and add beans and meat to vegetable mixture, along with prepared rice, chopped parsley and condensed tomato soup. continue to simmer, covered, 20 minutes.

Serving Size: makes 8-10 1 cup servings
