1/4 C Canola Oil
1/2 C brown sugar
1 egg white
1 C fat free yogurt
3/4 C shredded carrots
Half a medium apple, shredded
1/4 C raisins
1 1/2 C flour
1 tsp baking soda
1 tsp cinnamon
1/2 C nuts
Makes 12 muffins
Heat oven to 375*
Lightly spray muffin tins with cooking spray
Cream oil, brown sugar; add eggs and sour cream. Add carrots, apple, coconut and raisins
Combine flour, soda and cinnamon
Add dry ingredients to wet. Fold in nuts.
Bake for 20 mins.
