Introduction

Banana bread in muffin tins, without sugar (with a little honey) and with cottage cheese instead of butter. Banana bread in muffin tins, without sugar (with a little honey) and with cottage cheese instead of butter.
Number of Servings: 9

Ingredients

    3 eggs
    120g cottage cheese
    1.5 TB honey
    3 ripe bananas
    1.5 dl wheat flour (0.63 cup)
    2.5 tsp cinnamon
    2 tsp baking powder
    1 tsp vanilla extract
    1 dash salt
    a little oil for the tins (not in calculation)

Directions

Beat 3 eggs with 1.5 TB honey fluffy. Add 3 mashed bananas and 120g cottage cheese. Combine 1.5dl (0.63 cups) wheat flour with 2 tsp baking powder, 2 tsp cinnamon, 1 tsp vanilla extract and a dash salt. Add to the wet ingredients. Stir properly, it should be a rather sticky business. Put in 9 not so big muffin tins (grease a bit before; I used olive oil since I didnīt have anything else), bake at 220°C until almost dry (they should be a bit moist). In my oven it was almost 20 minutes.
