Daikon Kencho

Ingredients

    1-2 verylarge daikon radish

    2 big carrots

    1 deseeded dried red pepper

    2tbsp canola oil

    1 package of Aburage(fried soybean curd)

    Irico(dried anchovy) handful(opt)

    1/3 cup of water

    2tbsp sake

    1tbsp mirin

    3/4 tsp brown sugar

    1/4 cup of dashi shoyu( or 1 tbsp brown sugar to 3 tbsp soy sauce)

    1 package of firm tofu

Tips

The more daikon and carrots the better! Can cook with irico in the beginning for flavor and then take out.


Directions

1. Place tofu in strainer with a plate on top to drain
2. Cook carrots and daikon( thick slivers) in canola oil with red pepper
3. Cook about 5-7 min then add irico and aburage
4. Add water and cover with lid till water rises
5. Add seasoning
6. Cook 5 min then add crumbled firm tofu and cook for 10-15 more minutes

Serving Size: About 8 or more side dishes
