Philly Cheesesteak Stuffed Bell Peppers

Ingredients

    6 bell peppers, cut in half longwise and cleaned
    2 medium yellow onions, sliced
    2 small cans of mushrooms
    1 1/2 flank steak, sliced thin
    2 beef boullion cubes or 2 Cups of broth
    1/2 lb provolone cheese

Directions

Preheat ove to 350 degrees.
In a skillet, add the onions, mushrooms, flank steak and boullion cube with 1 1/2C water. Cook until steak is done, onions are tender and boullion is dissolved (about 10 - 15 min). Place halved peppers in 9 x 13 baking dish. Stuff each pepper with a 1/2 slice of provolone. Add spoonfuls of the steak mixture to each pepper until each pepper is full and the mixture is gone. Place a 1/2 slice of provolone on top of each stuffed pepper.

Place in oven uncovered for 20 minutes or until the cheese is melted and bubbly.
