Easy Weeknight Refried Bean Quesedilla

Ingredients

Old El Paso Far Free Refried Beans (try the spicy version if you like a little extra heat)
Mission whole wheat tortillas
Fresh or dried cilantro
and for the topping:
Shredded Mexican blend cheese (low or reduced fat)
sour cream
hot sauce (we like Sriracha)
Cooking spray for baking sheet
Tips
Depending on how you fold your tortilla, it can help to do a quick spray of cooking spray o top before sprinkling the cheese - this way it bakes spread out nicely across the top (and doesn't fall off as you are placing in the oven)
Directions
Heat oven to 325 degrees.
In a bowl, mix the refried beans with fresh chopped or dried cilantro, mix well.
Lay out tortillas on a flat clean surface, and fill center with bean mixture.
Fold tortilla to your choice of shape. You can fold in half, roll like a burrito or wrap like an envelope.
Place on baking sheet sprayed with cooking spray and sprinkle the top of the tortillas with shredded cheese. Bake for 10-15 minutes or until nicely browned.
Serving Size: One filled tortilla
