Introduction
3C's because it contains: celery, courgette(zucchini) and carrot. My omelet fell apart when serving in the picture.I had a few leftovers and threw them together. Ingredients
-
2 eggs
1 small carrot
1/4 courgette (=zucchini)
1 celery salk
2 chopped slices of parma ham (or any other low calorie ham)
Herbes de Provence
garlic powder
salt and pepper to season
Optional:
brown rice to bulk it out (I added this since it was leftover)
you could also add leftover potato in small ammounts
cheese (not included in this recipe calculation)
Tips
you can add cheese but I left it out because of it's high fat content
vegetarian version: leave out the ham
substitute ham with fish such as salm or tuna
Directions
1. cut all the vegetables into small pieces, the smaller the faster they will cook. Cut the ham into strips half an inch(1.5 cm) long by 1/3 wide(1 cm).
2. cook vegetables and ham in a frying pan and low to medium heat until carrots are soft. In the meantime break the eggs into a bowl and add garlic power, Herbes de Provence, salt and pepper then whisk.
3. when vegetables are cooked tip them out of a frying pan into a bowl. Pour the eggs into the frying pan then add the vegetables and ham. Cook for another 5 minutes or until the eggs are cooked.
4. Serve and enjoy!
