Jamaican Barbecue Chicken

Number of Servings: 4

Ingredients

    1 fresh jalapeno chili pepper, seeded and chopped (optional)
    2 tbsp yellow mustard
    1 tsp rosemary, crumbled
    2 tsp basil
    2 tsp thyme leaves
    1/2 cup chopped green onion
    2 cloves garlic, pressed
    1 tsp salt
    Black pepper to taste
    2 tbsp lime juice
    4 boneless skinless chicken breast

Directions

Process all ingredients except chicken breasts in food processor or blender until blended. Spread mixture on one side of each of the chicken breasts.

Preheat oven to broil.

Place chicken, coated side up, on broiler pan; broil about 5 inches from heat source for about 25 minutes total, turning chicken half way through cooking time; baste with remaining barbecue sauce and finish cooking.
