3 cups cooked shredded chicken
6 oz. FF cream cheese, softened
1/3 c. RF sour cream
1/2 c. salsa
1.5 c. shredded Kraft 2% cheddar cheese
1.5 c. chopped baby spinach, stems removed
Salt and pepper to taste
10 fajita size (6") flour tortillas
2. Working with one tortilla at a time spread 2 heaping tablespoons of the chicken mixture off center and spread out across the tortilla. Roll up and set seam side down on a platter. Repeat until all the tortillas are filled and rolled.
3. Spray a large skillet generously with non-stick cooking spray (you can use oil, but that adds calories, fat, etc.). Heat on medium heat, cook tortillas in batches until golden brown on each side. Remove and drain on paper towels.
4. Serve with your choice of salsa, ranch dressing, guacamole, etc., but be sure to add the calories for that!
Serving Size: Makes 10 servings of 1 Taquito each
