Couscous on the American Farm

Introduction

This recipe gives flavor and variety to couscous while adding healthy ingredients. I do not add salt to any food however in this instance I have used commercially prepared chicken broth containing it This recipe gives flavor and variety to couscous while adding healthy ingredients. Number of Servings: 10

Ingredients

    1 (14 0z) can Caskeys Chicken broth

    3 cups water

    1 tsp ground tumeric

    1/2 tsp ground thyme

    1 tsp dried parsley

    1/2 tsp ground cumin

    1/2 tsp dried coriander leaf (ground )

    3 cloves garlic, ( peeled and minced or crushed)

    1 skinless boneless chicken breast ( approx 10 ounces, separable fat removed) cut in bite sized piece chunks.

    1 medium onion, peeled and diced ( about 4 oz)

    1 large stalk celery leaves included, diced

    1/4 cup sweet red pepper seeded and diced

    5 medium baby carrots, diced

    1 med. zuccini , cut in 1/4 to 1/2 inch chunks

    1 2/3 cups dry plain couscous

    1 Tbsp olive oil

    1large tomato, seeded and chopped



Tips

The chicken breast is actually 1/2 of actual breast of a chicken and normal commercially packaged size. I use the tomato as a garnish


Directions

In large pot bring broth, water, herbs, chicken pieces and prepped veggies (except diced tomatoes) to boiling. boil about 15 minutes.
add couscous and olive oil. cover and remove from heat.
Let stand 10 minutes. fluff with a fork before serving and top with raw chopped tomatoes divided among servings.

Serving Size: about 10 servings 3/4 cup each
