Chicken Stir Fry

Ingredients

    3 cups Brown Rice, long grain cooked
    1.5 lbs boneless skinless chicken breast
    2 T. Olive Oil
    3 cups fresh or frozen Broccoli
    1 cup sliced carrots
    1/2 cup chopped Scallions
    4 T. Soy Sauce
    2 T. Cornstarch
    2 T. Brown Sugar
    1/4 c. (or less) chicken or beef stock
    1 clove chopped garlic

Directions

Brown chicken in a hot pan with olive oil and season with salt and pepper. Add carrots, celery, and broccoli and cover with lid. Cook until crisp tender. Mix soy sauce, corn starch, brown sugar, garlic and half of beef stock in cup, then add to the pan. Cook until thickened (adding stock as necessary). Serve over brown rice (included in calorie count).

Serving Size: Makes 5 servings
