Asian Tofu Stir Fry with Veggies

Ingredients

    Veggies:
    Asparagus Spears
    Baby Carrots
    Celery Sticks
    Frozen Whole Kernel Corn
    Frozen French Style Green Beans
    Frozen Broccoli
    Whole mushrooms
    Green, Yellow and Red Bell Peppers

    Spices/Seasonings:
    Salt
    Pepper
    Garlic Powder
    Kikkoman Gluten-Free Soy Sauce

    Extra Firm Tofu (cubed)

Tips

Corn, green beans and broccoli can be fresh or canned.


Directions

1. Remove half of tofu from package and drain excess water. Pat dry.
2. Create marinade in container mixing 4 tbs of soy sauce, 1/2 cup of water, 1.5 tbs garlic powder, dash of salt and dash of pepper.
3. Marinate overnight (or for 3 hours).
4. Chop asparagus, dice carrots, chop celery, cut peppers into strips and then halve them, slice mushrooms.
5. Heat a skillet with 1.5 tbs olive oil and 1tbs of soy sauce.
6. Throw in all of the veggies (including the broccoli, corn and green beans).
7. Saute and "stir fry" for 5 minutes.
8. Pour in half of the marinade from tofu into skillet.
9. Cook for another few minutes.
10. Drain the veggies from the skillet into a strainer.
11. Add remaining olive oil to same skillet.
12. Add tofu and cook for 5 minutes.
13. Add veggies back into skillet.
14. Spoon in remaining marinade.
15. Cook for an additional 10 minutes.
