Introduction
This is more like a soup cooked this way. Did not have any beans and wanted to toss everything in the slow cooker on low. Cook some rice and a green vegetable and dinner is served. Ingredients

2 lbs. pork shoulder, visible fat removed
1 T chili powder
1/2 t red pepper flakes
1/2 t salt, kosher or sea
3 cloves garlic, halved
1 can chicken stock, low sodium
2 large onions sliced in large slices that lay flat.
optional rice ,
any cooked green vegetable.

Tips
Pepitas are shelled pumpkin seeds, which you can find in the nuts aisle.
Directions
Prepare spice rub by combining the chili powder, red pepper and salt. Rub over the pork shoulder.
Place the onions in the bottom of the crock.
Place the seasoned pork on top of the onions.
Pour the broth and the tomatoes over the roast with the garlic. Set on low and cook for 3-4 hours. Remove lid and break up meat.
Serve over steamed brown rice
