16 oz. Ground beef, lean 1/4 cup Corn-flake Crumbs 1/4 cup Ketchup 1 Egg Small Can Fat Free Evaporated Milk 24 oz. Baby Carrots 6-8 Potato cut into quarters 1 Onion, sliced 18 oz. beef gravy, more or less to taste
Mix and form first 5 ingredients into a loaf. Place in a large baking dish or roasting pan. Arrange carrots and potatoes around loaf and onion slices on top. Salt and pepper if desired. Pour Beef gravy over all. Cover tightly with foil and bake at 400 degrees for 1 - 1 1/2 hours. Check for veggie tenderness and fully cooked meatloaf.
