Jenn's Cheesy Chicken Enchiladas

Introduction

Number of Servings: 6

Ingredients

    12 ounces of cooked, cubed chicken breast.
    2 cans of Old El Paso Mild Enchilada sauce
    3/4 cup of shredded Mexican or Cheddar Cheese
    6 Ole Xtreme Wellness tortillas

    Sour Cream and Salsa to dip, if desired. (Not calculated)

Tips

It is great with salsa and sour cream on top. (Not calculated in nutritional facts)


Directions

Spray a baking sheet with Pam. Place 2 chicken breasts on the baking sheet and cook for 25 minutes or until cooked through at 375.

Let cool. Dice chicken into small cubes.

In a 9x13 pyrex pan coat the bottom with enchilada sauce to prevent sticking.

Take a large plate and pour some enchilada sauce on it covering it completely. Take a tortilla and dip it into the enchilada sauce flip and cover the other side as well. Add 2 ounces of chiken, and 1/8 a cup of cheese and roll it up. (add jalapenos if desired). Place it in the pyrex pan. Do the same with other 5 tortillas.

Place and cook in preheated oven at 375 for 20 minutes or until thoroughly heated through.

Serving Size: Makes 6 enchiladas
