Sweet and Sour pineapple pork

Introduction

This recipe has lots of sauce which is awesome over rice. This recipe has lots of sauce which is awesome over rice.
Number of Servings: 8

Ingredients

    585 grams pork tenderloin or boneless pork chopped trimmed of all visible fat
    1/4 cup white flour
    2 tbsp canola oil, divided
    1/2 cup broccoli, chopped
    1 cup chopped onion
    2 cups chopped celery
    1 cup chopped carrot
    1 medium-large red or yellow bell pepper, chopped
    2 cups pineapple tidbits (from one can)
    .8 cup pineapple juice (this is the juice from the can above)
    4 tbsp white vinegar
    1/4 cup soy sauce
    1/2 cup water
    1-2 tsp black pepper
    2 tsp garlic powder
    2 tsp onion powder
    1/4 cup cornstarch

Directions

1. Toss flour over cubed pork and stir fry in 1 tbsp canola oil until browned on all sides. Remove from pot and set aside.

2. Add remaining oil to pan and cook veggies until tender crisp. Remove and set aside with pork.

3. Add pineapple juice, vinegar, water, soy sauce, pepper, garlic and onion powders to pot and heat to almost boiling. Mix cornstarch with enough water to make a smooth paste and stir into pineapple juice mixture and stir until thickened. Add pineapple tidbits, cooked veggies and pork and heat thoroughly. Serve alone or over brown rice for a healthy complete meal.
