Introduction

A quick tomato shrimp curry A quick tomato shrimp curry
Number of Servings: 1

Ingredients

    1 tsp olive oil
    2 tsp curry powder
    1 tsp dried thyme
    2 cloves minced garlic
    1/4 chopped red or yellow onion
    1/4 colored pepper chopped
    1/2 c frozen peas
    1/3 c FF chicken broth
    1 firm medium tomato deseeded and chopped
    salt and pepper to taste
    4 oz raw Shrimp
    1 tbsp whip cream cheese

Tips

Pour over 1/2 mashed cauliflower, instead of rice.


Directions

Saute garlic, onion, pepper, peas, curry powder, thyme, in 1 tsp olive oil over medium high heat. Add 1/2 of the broth and stir fry 3 minutes. Add tomato and shrimp and the rest of the broth and stir fry until shrimp no longer pink. Season to taste with salt and pepper. Stir in cream cheese until melted and turn off heat.
