MAKEOVER: Spicy Tuna Sandwich (by DELAIN1)

Number of Servings: 16

Ingredients

    16 slices of bread
    Extra virgin olive oil to fry
    1 small onion
    1 capsicum small
    1 tomato
    1/2 cup leeks
    1 can of albacore tuna
    2 tbsp mayonnaise .

Directions

Slice the onion and leeks.
Add olive oil to pan and toss in onions and leeks
Saute until light brown.
Chop tomatoes and capsicums and add to pan.
Fry for 3 minutes.
Add tuna and leave for 5 minutes on low heat.
Scoop the mixture into a bowl and mix in mayonnaise.
Spread on bread slices.
