Seafood Chowder

Introduction

Exchange shrimp or scallops for any firm white fish, or add seafood as desired Exchange shrimp or scallops for any firm white fish, or add seafood as desired
Number of Servings: 4

Ingredients

    3 slices bacon, cooked,drained and crumbled
    1/2 cup chopped onion
    1/2 cup sliced celery
    11-12 new potatoes, halved
    1 carton Campbell low sodium chicken broth
    8oz small shrimp
    4 oz bay scallops
    1tin low fat evaporated milk

Directions

Cook bacon,drain on paper towel and crumble
Saut´┐Ż onion and celery in same pan after draining bacon fat
Prepare potatoes
Combine broth, vegetables and bacon in a large pot
Simmer for 30 minutes over med-low heat
Add seafood and bring back to a boil
Simmer 10 minutes or until seafood is cooked
Remove from heat and add evaporated milk
Serve and enjoy
