Tomato and Barley Soup

Ingredients

    2 T. olive oil
    4 lg carrots, sliced
    3 lg onions, chopped
    2 T. chopped garlic
    5 c. water
    1 c. uncooked pearl barley
    2-14 oz can diced tomatoes
    14 oz can of chicken broth
    1 c of mixed bean soup mix
    1 lb. ground chicken or turkey, browned

Directions

Cook carrots, onions and garlic in oil over medium heat stirring occassionally until vegetables are tender. All all remaining ingredients and cook until it comes to a full boil. Reduce heat to low. Cover and cook until barley is tender, about 45 minutes.
