Ingredients

    2 c. (16-oz bag) dry lentils
    8 c. water
    1 onion, diced
    2 carrots, diced
    3 medium potatoes, diced
    3 cloves garlic, chopped
    2 tsp. cumin
    1 smoked ham hock
    1 bay leaf
    1 Tbsp. salt
    1 tsp. curry powder

Tips

For a low sodium modiication, just omit the salt in the recipe and it will be about 26 mg sodium per serving.
(Without salt, you might want to use a different combination of spices.)


Directions

In a large saucepan, combine all the ingredients. Bring it to a boil, then reduce heat, cover and simmer until lentils are soft (45 minutes). Stir occassionally while cooking.

Makes 10 one-cup servings.
